Food
Club-Mate Chili
- 1 lb dried or 3 15-ounce cans of black beans, drained (or another type of bean)
- 3 Tbsp grapeseed, corn, or canola oil
- 2 onions, chopped
- 3 cloves garlic, minced (or to taste)
- 1 28-ounce can chopped tomatoes with liquid
- 1 500 mL bottle Club-Mate
- 2 Tbsp chili powder (or to taste)
- 1 cinnamon stick (approx. 3 inches)
- salt and pepper to taste
- If using dried beans, put them in a large pot and cover with 2-3 inches of cold water. Put the pot on the stove over high heat; bring to a boil and boil 2 miuntes, uncovered. Then, turn off the heat, cover the pot, and allow to soak for about 2 hours. Then drain the beans and set them aside.
- Put the oil in a large pot (you can re-use the same one you used to soak the beans) over medium-high heat. When it’s hot, add the onion and garlic and cook until the onion is soft, 5-6 minutes.
- Add the tomato, Club-Mate, cinnamon, and drained beans. Add water if necessary to cover the beans and tomato. Bring to a boil; then, lower the heat and cover the pot. If using the soaked dried beans, add salt and pepper after about 30 minutes; if using canned, add salt and pepper with the beans.
- Continue cooking until the beans are as you like them, another 45-75 minutes if using dried beans or quicker if using canned. You may need to add additional salt, pepper, or brown sugar to get the taste as you like it.
